Air fryer chicken schnitzel bites with honey mustard sauce. These crispy-coated buttery chicken bites are super juicy. The paprika adds a hint of smokiness which works wonders with the honey mustard dipping sauce. The addition of vinegar with the honey cuts through the sweetness. Dill and chicken are a perfect traditional combination with mustard. If you aren’t a dill lover, try parsley or chives.
Ingredients (10)
* 125g (2 1/2 cups) panko breadcrumbs
* 60g (3/4 cup) shredded parmesan
* 1 tbsp smoked paprika
* 185g butter, melted
* 500g chicken breast fillets, cut into 4cm pieces
Honey mustard sauce
* 125ml (1/2 cup) honey
* 3 tsp Dijon mustard
* 3 tsp red wine vinegar
* 1 tbsp chopped fresh dill
* ½ tsp mustard powder (optional)
Method
Step 1
Combine the breadcrumbs, parmesan and paprika in a shallow bowl. Season. Place the butter in a separate shallow bowl. Dip a piece of chicken in the butter, allowing excess to drip back into bowl. Place chicken in the breadcrumb mixture, pressing firmly to coat. Dip in the butter and breadcrumb mixture again to give a double coating. Place on a plate. Repeat with the remaining chicken, butter and breadcrumb mixture. Place in the fridge for 30 minutes to chill.
Step 2
Place half the chicken bites in an air fryer basket, allowing room between each bite. Spray with oil. Cook at 180C for 12 minutes or until golden and cooked through. Repeat with the remaining bites.
Step 3
Meanwhile, make the honey mustard sauce. Place the honey in a microwave-safe jug. Microwave for 30-60 seconds or until heated through. Add the Dijon, vinegar, dill and mustard powder, if using. Stir until combined.
Step 4
Drizzle the honey mustard sauce over the chicken bites to serve.
